Fried Nile Tilapia With Green Mango Dressing
[Plaa Nin Song Khreuang]
Ingredients
1 Nile Tilapia fish (river fish), about 400 grams
½ cup shredded green mango
1 tbsp finely sliced hot chili
2 tbsp crisp-fried sliced garlic
1 tsp salt
1 tbsp sugar
3 tbsp fish sauce
4 cups vegetable oil, for deep-frying
Method
Scale the fish, slit down the middle and remove the insides. Rub well with salt to remove fishy smell, wash thoroughly. Slit diagonally on both sides and allow to drain.
Heat the oil in a wok over medium heat; fry the fish until golden and crispy. Remove from the oil and arrange on a serving dish.
Mix sugar and fish sauce together; stir until sugar dissolves. Add the chili and mango, stirring well.
Spoon sauce over the fried fish and sprinkle with fried garlic before serving. Provide a finishing touch with a sprig of sweet basil.
