Broccoli And Ham In Cheese Sauce
Ingredients
8 broccoli spears
25 g (1 oz) butter
25 g (1 oz)plain flour
450 ml (¾ pint) milk
1 teaspoon made English mustard
¼ teaspoon cayenne pepper
125 g (4 oz) Cheddar cheese, grated
8 thin slices ham
Salt to taste

Method
Arrange the broccoli in a large shallow dish, with the heads in the centre and the stalks radiating out to the sides. Add 4 tablespoons boiling water, cover and cook on HIGH for 8 minutes. Drain and set aside.
Place the butter in a howl and microwave on HIGH for 1 minute. Stir in the flour and microwave for 30 seconds. Gradually stir in the milk, then cook on HIGH for 4 minutes, stirring twice during cooking.
Whisk the mustard and cayenne pepper into the sauce, add the cheese and season with salt.
Wrap each broccoli spear in a slice of ham, arrange in a dish, then pour over the cheese sauce. Cook on HIGH for 3 minutes. Brown under a hot grill if you wish.
Serve immediately, with crusty bread and tomato salad.
