Grilled Asparagus With Salt-Cured Ham

Barbecued asparagus has a wonderfully intense flavour that stands up well to the wrapping of crisp, salty ham. Serve this traditional tapas dish with drinks before a meal.

Ingredients

6 slices of serrano ham
12 asparagus spears
15ml/1 tbsp olive oil
Sea salt and coarsely ground black pepper

Details

Serves: 4


Method

1. Halve each slice of ham lengthways and wrap one half around each of the asparagus spears.


2. Brush the ham and asparagus lightly with olive oil and sprinkle with salt and pepper. Cook on a medium barbecue for about 4 minutes, turning frequently, until the asparagus is tender but still firm. Serve at once.

Cook's Tip:- If you can't find serrano ham, try using Italian prosciutto or Portuguese presunto.
