Bacon Kofta Kebabs And Salad

Kofta kebabs can be made with any type of minced meat, but bacon is very successful, if you have a food processor.

Ingredients

250g/9oz lean streaky bacon rashers, roughly chopped
1 small onion, roughly chopped
1 celery stick, roughly chopped
75ml/5 tbsp fresh wholemeal breadcrumbs
45ml/3 tbsp chopped fresh thyme
30ml/2 tbsp Worcestershire sauce
1 egg, beaten
Salt and freshly ground black pepper
Olive oil, for brushing

FOR THE SALAD

115g/4oz/¾ cup bulgur wheat
60ml/4 tbsp toasted sunflower seeds
15ml/1 tbsp olive oil
Salt and freshly ground black pepper
Handful celery leaves, chopped

Serves: 4


Method

1. Place the bacon, onion, celery and breadcrumbs in a food processor and process until chopped. Add the thyme, Worcestershire sauce and seasoning. Bind to a firm mixture with the egg.


2. Divide the mixture into eight equal portions and use your hands to shape them around eight bamboo skewers.


3. For the salad, place the bulgur wheat in a bowl and pour over boiling water to cover. Leave to stand for 30 minutes, until the grains are tender.


4. Drain well, then stir in the sunflower seeds, olive oil, salt and pepper. Stir in the celery leaves.


5. Cook the kofta skewers over a medium-hot barbecue for 8-10 minutes, turning occasionally, until golden brown. Serve with the salad.
