Thai Beef Salad

A hearty salad of beef and crunchy vegetables, laced with a tangy chilli and lime dressing. The barbecued meat gives a truly delicious favour to the salad.

Ingredients

2 sirloin steaks, about 225g/8oz each
1 red onion, finely sliced
½ cucumber, finely sliced into matchsticks
1 stalk lemon grass, finely chopped
30ml/2 tbsp chopped spring onions
Juice of 2 limes
15-30ml/1-2 tbsp Thai fish sauce
2-4 red chillies, finely sliced, to garnish
Fresh coriander, Chinese mustard
Cress and mint leaves, to garnish

Serves: 4


Method

1. Barbecue or pan-fry the beef steaks until they are medium-rare. Allow the steaks to rest for 10-15 minutes.


2. When the steaks have cooled slightly, slice them thinly, using a heavy knife, and put the slices into a large bowl.


3. Add the sliced onion, cucumber matchsticks and chopped lemon grass.


4. Add the spring onions. Toss and season with lime juice and Thai fish sauce. Serve at room temperature or chilled, garnished with the chillies, coriander, mustard cress and mint.
