Stilton Burgers
A variation on the traditional burger, this tasty recipe contains a delicious surprise: a creamy filling of lightly melted Stilton cheese.
Ingredients
450g/1lb/4 cups minced beef
1 onion, chopped
1 celery stick, chopped
5ml/1 tsp dried mixed herbs
5ml/1 tsp prepared mustard
50g/2oz/½ cup crumbled Stilton cheese
4 burger buns
Salt and freshly ground black pepper

Serves: 4
Method
1. Mix the minced beef with the chopped onion, celery, mixed herbs and mustard. Season well with salt and pepper, and bring together with your hands to form a firm mixture.
2. Divide the mixture into eight equal portions. Shape four portions into rounds and flatten each one slightly. Place a little of the crumbled cheese in the centre of each round.
3. Shape and flatten the remaining four portions and place on top. Use your hands to mould the rounds together, encasing the crumbled cheese, and shaping them into four burgers.
4. Cook on a medium barbecue for about 10 minutes or until cooked through, turning once. Split the burger buns and place a burger inside each. Serve with salad and mustard pickle.
