Chicken With Herb And Ricotta Stuffing
These little chicken drumsticks are full of flavour and the stuffing and bacon help to keep them moist and tender.
Ingredients
60ml/4 tbsp ricotta cheese
1 garlic clove, crushed
45ml/3 tbsp mixed chopped fresh herbs, such as chives, flat-leaf parsley and mint
30ml/2 tbsp fresh brown breadcrumbs 8 chicken drumsticks
8 smoked streaky bacon rashers
5ml/1 tsp whole-grain mustard
15ml/1 tbsp sunflower oil
Salt and freshly ground black pepper

Serves: 4
Method
1. Mix together the ricotta, garlic, herbs and breadcrumbs. Season well with plenty of salt and pepper.
2. Carefully loosen the skin from each drumstick and spoon a little of the herb stuffing under each, smoothing the skin back over firmly.
3. Wrap a bacon rasher tightly around the wide end of each drumstick, to hold the skin in place over the stuffing during the cooking time.
4. Mix together the mustard and, oil and brush them over the chicken. Cook on a medium-hot barbecue for about 25 minutes, turning occasionally.
