Tofu Satay

Grill cubes of tofu until crispy then serve with a Thai-style peanut sauce. Soak the satay sticks before use to prevent them burning while on the barbecue.

2 x 200g/7oz packs smoked tofu
45ml/3 tbsp light soy sauce
10ml/2 tsp sesame oil
1 garlic clove, crushed
1 yellow and 1 red pepper, cut in squares
8-12 fresh bay leaves
Sunflower oil, for brushing

FOR THE PEANUT SAUCE

2 spring onions, finely chopped
2 garlic cloves, crushed
Good pinch chilli powder, or a few drops hot chilli sauce
5ml/1 tsp sugar
15ml/1 tbsp white wine vinegar
30ml/2 tbsp light soy sauce
45ml/3 tbsp crunchy peanut butter

Details

Serves: 4

Method

1. Cut the tofu into bite-sized cubes and place in a large bowl. Add the soy sauce, sesame oil and crushed garlic and mix well. Cover with clear film and marinate for at least 20 minutes.

2. Beat all the peanut sauce ingredients together in a large bowl, using a wooden spoon, until well blended. Avoid using a food processor to blend the ingredients, as the texture should be slightly chunky.

3. Drain the tofu and thread the cubes on to 8-12 satay sticks, alternating the tofu with the pepper squares and bay leaves. Larger bay leaves may need to be halved before threading.

4. Brush the satays with sunflower oil and cook on a hot barbecue or grill, turning the sticks occasionally, until the tofu and peppers are browned and crisp. Serve hot with the peanut sauce.
