Sweet And Sour Vegetables With Paneer

The Indian cheese used in this recipe, called paneer, can be bought from Asian stores, or you can use tofu in its place. Paneer has a good firm texture and cooks very well on the barbecue.

Ingredients

1 green pepper, cut into squares
1 yellow pepper, cut into squares
8 cherry, or 4 medium, tomatoes
8 cauliflower florets
8 fresh or canned pineapple chunks
8 cubes paneer

FOR THE SEASONED OIL

15ml/1 tbsp soya oil
30ml/2 tbsp lemon juice
5ml/1 tsp salt
5ml/1 tsp freshly ground black pepper
15ml/1 tbsp clear honey
30ml/2 tbsp chilli sauce

Method

1. Thread the prepared vegetables, pineapple and paneer cubes on to four skewers, alternating the ingredients.


2. Mix together all the ingredients for the seasoned oil. If the mixture is a little too thick, add 15ml/1 tbsp water to loosen it. Brush the vegetables with the seasoned oil, ready for cooking.


3. Cook on a hot barbecue or grill for 10 minutes, until the vegetables begin to char slightly, turning the skewers often and basting with the seasoned oil. Serve on a bed of plain boiled rice.
