Tabbouleh

This classic Lebanese salad has become very popular everywhere. It makes an ideal substitute for a rice dish and is especially good with barbecued lamb.

Ingredients

175g/6oz/1 cup fine bulgur wheat
Juice of 1 lemon
45ml/3 tbsp olive oil
40g/1½ oz fresh parsley, finely chopped
45ml/3 tbsp fresh mint, chopped
4-5 spring onions, chopped
1 green pepper, sliced
Salt and freshly ground black pepper
2 large tomatoes, diced, and black olives, to garnish

Method

1. Put the bulgur wheat in a large bowl. Add enough cold water to cover the wheat and let it stand for at least 30 minutes and up to 2 hours.


2. Drain and squeeze the wheat with your hands to remove excess water. The bulgur wheat will swell to double its original size. Spread the wheat on kitchen paper to allow to dry completely.


3. Place the bulgur wheat in a large bowl, add the lemon juice, the olive oil and a little salt and pepper. Allow to stand for 1-2 hours if possible, in order for the flavours to develop.


4. Add the chopped parsley, mint, spring onions and pepper to the wheat in the bowl and mix well. Garnish with diced tomatoes and olives and serve. The tabbouleh can be prepared in advance, covered with clear film and stored in the fridge until needed.
