Tomato Soufflé With Basil

Ingredients

½ kg ripe tomatoes sliced thinly
3 tbsp finely chopped fresh basil
4 eggs, whisked
250 gr milk
1 tbsp sugar
1 tsp salt
Butter
Nutmeg

Details

Serves: 4


Method

1. Fry the tomatoes at low temperature for 15 minutes, or until soft. Squash tomatoes with fork, then add the basil.


2. Preheat oven at 180°C. Whisk the eggs with the sugar, milk and salt and spoon in the tomato purée.


3. Butter 4 small earthenware soufflé forms and pour in the mixture. Sprinkle with nutmeg, place in ben-mari and cook in the oven at 180°C for 20 minutes.
