Tomato And Cheese Tarts
These crisp little tartlets look impressive but are actually very easy to make. They are best eaten fresh from the oven.
Ingredients
3 sheets filo pastry
1 egg white
175g/6oz cream cheese
Handful fresh basil leaves
4 small tomatoes, sliced
Salt and freshly ground black pepper

Method
1. Preheat the oven to 200°C/400°F/Gas 6. Brush the sheets of filo pastry lightly with egg white and cut into 24 x 10cm/4in squares.
2. Layer the squares in twos, in 12 bun tins. Spoon the cream cheese into the pastry cases. Season with ground black pepper and top with fresh basil leaves.
3. Arrange the tomatoes on the tarts, season and bake for 10-12 minutes, until the pastry is golden. Serve warm.
Cook's Tip:- Use halved cherry tomatoes for the tarts, if you prefer.
