Nectarines With Marzipan And Mascarpone

A luscious dessert that no one can resist - dieters may prefer to use low-fat soft cheese or ricotta instead of mascarpone.

4 firm, ripe nectarines or peaches
75g/3oz marzipan
75g/3oz/5 tbsp mascarpone cheese
3 macaroon biscuits, crushed


Serves: 4


1. Cut the nectarines or peaches in half and remove the stones.

2. Divide the marzipan into eight pieces, roll into balls, using your fingers, and press one piece of marzipan into the stone cavity of each nectarine half.

3. Spoon the mascarpone cheese on top of the fruit halves. Sprinkle the crushed macaroon biscuits over the mascarpone cheese.

4. Place the half-fruits on a hot barbecue for 3-5 minutes, until they are hot and the mascarpone starts to melt. Serve immediately.

Cook's Tip:- Either nectarines or peaches can be used for this recipe. If the stone does not pull out easily when you halve the fruit, use a small, sharp knife to cut around it.
