Sauerkraut Rye
Ingredients
1 ½ lb. loaf
1 cup water
1 ½ tablespoon vegetable oil
3 tablespoon molasses
⅓ cup sauerkraut
¾ teaspoon salt
1 ½ tablespoon instant coffee granules
¾ cup rye flour
2 ½ cup bread flour
1 ½ tablespoon vital gluten
2 teaspoon active dry yeast
2 lb. loaf
1 ⅓ cup water
2 tablespoon vegetable oil
¼ cup molasses
½ cup sauerkraut
1 teaspoon salt
2 tablespoon instant coffee granules
1 cup rye flour
3 ½ cup bread flour
2 tablespoon vital gluten
2 ¼ teaspoon active dry yeast
Method
Cycle: wheat, white; no timer. Setting: medium
Notes: caraway seeds may be added to taste. The instant coffee gives the bread its dark colour.
