Carrot, Orange And Radish Salad
Ingredients
1 lb carrots, peeled and shredded
1 large onion, cut into bite-sized chunks
¾ cup radishes, thinly sliced
½ cup cilantro, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons orange juice
1 teaspoon orange-blossom water
Pinch of cinnamon
Salt and pepper
Pita wedges

Serves: 6
Method
Combine carrots, oranges, radishes and cilantro in a salad bowl. Whisk together the olive oil, juices, water, cinnamon, salt and pepper and pour over the salad. Cover and chill. Serve garnished with pita wedges.
