Potato Cake
This dish could be made into a substantial snack by adding chopped ham or salami.
Ingredients
250 g (8 oz) potatoes, grated
1 small onion, grated
1 tablespoon chopped parsley
25 g (1 oz) butter
Salt and pepper to taste

Method
Preheat a browning skillet on HIGH for 8 minutes.
Meanwhile, mix together the potato, onion, parsley, salt and pepper.
Place the butter on the hot skillet and microwave on HIGH for 1 minute. Quickly add the potato mixture, patting it down to a round shape with a fork. Cook on HIGH for 4 minutes.
Invert the potato cake onto a flat baking sheet, then slide it straight back onto the skillet. Cook for 5 minutes. Serve immediately.
