Cumin-Scented Veggie Rollers
Ingredients
4 ounces cream cheese, softened
1 carrot, shredded
1 tablespoon cumin
4 (8-inch) whole wheat tortillas
4 romaine lettuce leaves
2 boneless chicken breasts, cooked and sliced
1 zucchini, cut into matchstick strips
1 red bell pepper, thinly sliced
2 tablespoons pine nuts, toasted and crushed

Method
Combine the cream cheese, carrot and cumin in a bowl and mix well. Spread an equal amount of the mixture over each tortilla.
Layer equal amounts of the lettuce, chicken, zucchini and bell pepper on each tortilla. Sprinkle with the pine nuts. Roll tightly to enclose the filling, tucking in the ends.
FOR VEGETABLE WRAPS, LAYER ½ CUP OF YOUR FAVORITE CUT-UP VEGETABLES (SUCH AS BROCCOLI, ZUCCHINI, RED BELL PEPPERS AND TOMATOES) AND 2 TABLESPOONS SHREDDED CHEDDAR CHEESE ON A 10-INCH FLOUR TORTILLA. TOP WITH 1 TABLESPOON RANCH SALAD DRESSING AND ROLL TO ENCLOSE THE FILLING.
