Fava Bean Salad
Ingredients
4½ cups fresh fava beans
4 tablespoons olive oil
1 teaspoon cumin
Salt
4 tablespoons Italian parsley, chopped
2 garlic cloves, chopped
Juice of ½ lemon

Serves: 4
Method
Shell the beans and cook for about 20 minutes, until tender, in the top of a steamer. Drain and peel. While still warm, add the olive oil, cumin and salt, to taste. Toss well and chill.
Serve tossed with parsley, garlic and lemon juice. Add more oil if necessary.
