Black Bean Soup
Ingredients
Makes 8 cups
2 cans (15oz each) black beans, drained and rinsed
2 cans (4.5oz each) chopped green chillies
1 can (14.5oz) Mexican stewed tomatoes, undrained
1 can (14.5oz) diced tomatoes, undrained
1 can (11-16oz) whole kernel corn, drained
4 green onions, sliced
2 to 3 tablespoon chilli powder
1 teaspoon ground cumin (optional)
½ teaspoon dried minced garlic
Method
Combine all ingredients in a 5 quart slow cooker, it should also fit into a 3 qt. Cover and cook on high 5 to 6 hours. You can cook it low all day. Serve it with shredded Cheddar cheese and fat free sour cream.
