Black Eyed Peas

Ingredients

1 x 16 oz bag of dried black-eyed peas
1 small ham hock
1 x 14 ½ oz can of diced tomatoes with jalapeños
1 x 14 ½ oz can of diced tomatoes with mild green chillies
2 x 10 ½ oz cans of chicken broth
1 stalk of celery, chopped
Salt and pepper to taste (it doesn’t need much, if any)


Method

Pre-soak black-eyed peas according to the instructions on the bag. Combine all ingredients and cook on low for 8-10 hours. Serve on New Year’s Day for good luck!
