Stir-Fried Squid
Ingredients
3-4 tablespoons olive oil
450g (1 lb) fresh squid, sliced into rings
2 onions, finely chopped
1 red pepper, cut into julienne strips
1 green pepper, cut into julienne strips
4 garlic cloves, finely sliced
3 dried red chillies, chopped
5 tomatoes, skinned, seeded and diced
Good handful of spinach leaves, chard or similar greens
Salt and freshly ground black pepper
4 tablespoons soy sauce

Method
1.Heat the oil in a wok until very hot. Add the squid and onions and stir-fry for about 30 seconds. Add the peppers and stir-fry for a further minute.
2.Add the garlic, chillies and tomatoes and cook for another minute or so. At the last minute stir in the leaves. Season, then sprinkle with soy sauce, toss and serve.
