Poached Egg On Toast
Ingredients
1 red or green (bell) pepper or a mixture of both
1 spring onion (scallion), chopped
75g/3oz/6 tbsp butter
Chilli flakes (optional)
2 eggs
2 thin slices toast
Salt and ground black pepper
Method
1. Cook the pepper and spring onions in the butter until soft. Add chilli if liked.
2. Poach the eggs in a frying pan of simmering water for 2-3 minutes, until set. Arrange the peppers and eggs on toast and serve at once.
