Classic Egg Mayo Sandwich
Ingredients
4 eggs
4 spring onions (scallions), chopped
1 dill-pickled cucumber, chopped
Softened butter
4 thick slices bread
Mustard and cress, watercress, or rocket (arugula)
Salt and ground black pepper
For the mayonnaise
2 egg yolks
2.5ml/½ tsp Dijon or English (hot) mustard
300ml/½ pint/1¼ cups mild olive oil
15ml/1 tbsp white wine vinegar or a squeeze of lemon juice
Salt and ground black pepper

Method
1. Make the mayonnaise. Beat 2 egg yolks with the mustard and salt in a bowl. Add half the oil a tablespoon at a time and whisk in each addition until the mixture begins to thicken. Add the vinegar or lemon juice and beat again. Add the remaining oil in a thin, steady stream, beating all the time. Season. Chill.
2. Place the eggs in a pan and cover with cold water. Simmer for 7 minutes. Drain and immerse in cold water.
3. Peel and roughly chop the eggs. Add the spring onions, cucumber and enough mayonnaise to make a thick, spreadable mixture.
4. Butter the bread. Scatter with cress, watercress or rocket and pile the filling on top. Top with bread.
