Poached Salmon Steak
Ingredients
4 tablespoons (⅓ cup) dry white wine
2 peppercorns
1 bay leaf
1 teaspoon salt
Pinch of pepper
1 lemon, thinly sliced
1 tablespoon (1 tablespoon) dried (instant minced) onion
4-5 salmon steaks
Dill and parsley sauce:
6 tablespoons (½ cup) soured cream
1 teaspoon lemon juice
1 tablespoon chopped fresh parsley
½ teaspoon dried dill weed
Garnish:
1 lemon, halved
Parsley sprigs

Serves: 4
Method
Put the wine, peppercorns, bay leaf, salt, pepper, sliced lemon and onion with a generous ½ pint ( 1½ cups) hot water in a 7½ x 12 inch heat resistant dish. Cook uncovered on HIGH for 5 minutes until boiling. Carefully place the fish in the hot liquid. Cover and cook on HIGH for 1 minute.
Turn the fish and cook for a further minute. Leave to stand for 5 minutes. Drain. Combine the cream, lemon juice, parsley and dill weed. Serve the salmon steaks on a platter garnished with the lemon halves and parsley sprigs. Serve the sauce separately.
