Chicken Fried Steak

Ingredients

1 ½ -2 lb boneless beef top round steak, cut about ½ inch thick and trimmed of all fat
1 large egg
2 tablespoons milk
1 cup all-purpose flour or fine cracker or bread crumbs
Salt and black pepper
6 tablespoons corn oil
1-2 tablespoons Worcestershire sauce


Method

Pound the beef with a meat mallet or the side of a heavy plate to break down the fibers. Continue pounding with the mallet or the base of a heavy skillet until the meat is about ¼ inch thick.


Lightly beat the egg with the milk. Season the flour or crumbs with salt and pepper to taste.


If desired, cut the beef into four portions. Dip in the egg mixture to coat on all sides, then dredge lightly but evenly in the seasoned flour or crumbs.


Heat the oil in a large heavy skillet until very hot. Add the beef and brown well on both sides to make a good crust. Reduce the heat to low, add the Worcestershire sauce and cover the pan. Continue cooking 5-10 minutes or to the desired degree of doneness.


Serve hot.
