Creamed Beetroot
Ingredients
1 lb. cooked beetroot, peeled and sliced
3 tablespoons (4 tablespoons) soured cream
1 tablespoon lemon juice
1 teaspoon sugar
Salt, pepper
1 tablespoon chopped chives

Serves: 4
Method
Layer the beetroot in a heat resistant serving dish. Combine the cream, lemon juice, and sugar. Add salt and pepper to taste. Pour over the beetroot and cook on HIGH for 2-3 minutes until heated through, then sprinkle with the chives and serve at once.
