Date Flapjacks
Ingredients
250 g (8 oz) dates, stoned and chopped
3 tablespoons water
75 g (3 oz) margarine
1 tablespoon golden syrup
50 g (2 oz) demerara sugar
125g (4 oz) porridge oats
125 g (4 oz) wholemeal flour

Method
Place the dates and water in a bowl, cover and cook on HIGH for 3 minutes. Mash the soft dates with a fork, adding a little more water if they are too dry to make a spreading consistency. Place the margarine, syrup and sugar in a bowl and microwave on HIGH for 2 minutes, until the margarine has melted. Mix in the oats and flour. Spread one half of the oat mixture over the base of an 18 cm (7 inch) flan dish, then cover with the dates, spreading evenly. Spoon the remaining oat mixture on top and press down well. Cook on HIGH for 5 minutes. Cut into wedges, while still slightly warm. Leave until cold, then remove the flapjacks from the dish.
