Fruit Surprise Pudding

Ingredients

3 oz. (⅓ cup) butter
8 oz. (1 cup) sugar
10 oz. (2½ cups) flour
2 teaspoons baking powder
½ teaspoon salt
8 fl. oz. (1 cup) milk
1 teaspoon vanilla essence
4 oz. (½ cup) maraschino cherries drained and chopped
8 oz. can crushed pineapple, drained
½ oz. (1 tablespoon) butter
8 oz. (1 cup) soft (light) brown sugar
¼ pint (⅔ cup) double (heavy) cream, whipped

Method

Cream the butter and sugar until light and fluffy. Sift the flour, baking powder and salt together.

Combine the milk and vanilla essence. Add the dry ingredients alternately with the milk to the creamed mixture. Spread the mixture in a buttered 2 quart heat resistant dish.

Sprinkle with the cherries and pineapple and dot with butter. Cover the fruit with an even layer of brown sugar. Pour ¼ pint (⅔ cup) boiling water over.

Cover with waxed paper or non-stick vegetable parchment. Cook on HIGH for 10-12 minutes, giving the dish a quarter turn every 2½ minutes. Leave to stand covered for 10 minutes before serving.

Serve the pudding in individual dishes. Top each with a generous spoonful of whipped cream.
