Fruited Cookie Squares
Ingredients
6 oz. (1 cup) mixed dried fruit or chopped dates or glace cherries
4 oz. (1 cup) pecans or walnuts, chopped
6 oz. (1 cup) soft (light) brown sugar
3 oz. (¾ cup) flour
1½ teaspoons baking powder
¼ teaspoon salt
3 eggs
1 teaspoon vanilla essence
Cinnamon
Sugar

Method
Thoroughly mix the fruit, nuts, sugar, flour, baking powder and salt together. Beat the eggs with 1½ tablespoons (2 tablespoons) water and vanilla essence, then stir into the fruit mixture, blending thoroughly.
Turn into an 8 x 8 x 2 inch buttered dish and cover loosely with plastic film. Cook on HIGH for about 8 minutes, giving the dish a turn at two minute intervals. Leave to rest for 10 minutes, then turn out onto a rack. Cut into squares and sprinkle with cinnamon and sugar.
