Horseradish Beef Salad In Lettuce
Ingredients
½ small red onion, thinly sliced
2 ounces Asian cellophane noodles
¼ cup mayonnaise
Prepared horseradish to taste
16 ounces finely chopped roast beef
Bibb or red leaf lettuce
1 carrot, shredded
½ red bell pepper, thinly sliced
1 cup shredded red cabbage

Method
Combine the onion with ice water to cover in a small bowl. Combine the noodles with cold water to cover in a bowl and let stand for 15 minutes; drain. Cut the noodles into 2-inch pieces. Cook the noodles using the package directions; drain.
Combine the mayonnaise and horseradish in a bowl and mix well. Add the beef and mix well. Drain the onion. Place a lettuce leaf on a clean work surface. Spoon a heaping tablespoonful of the beef mixture onto the center of the lettuce leaf. Top with noodles, onion, carrot, bell pepper and cabbage. Roll the lettuce leaf to partially enclose the filling. Tuck in the sides and roll to completely enclose the filling. Repeat with the remaining ingredients.
