Thai Beef In Lettuce Bundles
Ingredients
1 pound ground beef
2 tablespoons minced garlic
2 tablespoons minced shallot
2 green onions, sliced
1 stalk lemon grass, minced
2 to 3 teaspoons minced seeded fresh red chillies
⅓ cup minced mint leaves
3 tablespoons minced cilantro
1 teaspoon sugar
3 tablespoons fresh lime juice
Fish sauce to taste
Boston, Bibb or green leaf lettuce

Method
Shape the beef into 1-inch balls. Combine with water to cover in a saucepan. Bring to a boil and boil for 2 to 3 minutes or until cooked through; drain. Crumble the ground beef into a medium bowl.
Add the garlic, shallot, green onions, lemon grass, red chillies, mint, cilantro, sugar and lime juice to the ground beef and mix well. Add fish sauce. The mixture should be hot, salty and sweet. Spoon the mixture onto the lettuce leaves and roll to enclose the filling.
