Spicy Fruit Purloo
Ingredients
2 tablespoons butter
½ cup finely chopped scallions
¼ cup finely chopped green pepper
1 cup long grain rice
1 teaspoon salt
½ teaspoon white pepper
⅛ teaspoon cayenne
1 ½ cups water
1 cup diced country ham
1 cup diced fresh pineapple
¼ cup raisins
Method
Melt the butter in a heavy saucepan and cook the scallions and green pepper until the scallions are softened. Add the rice, salt, pepper and cayenne and cook, stirring, for 1 minute. Stir in the water, ham, pineapple and raisins. Bring to a boil, then cover and simmer for 15-20 minutes or until the rice is tender and all the liquid has been absorbed.
