Chocolate Coconut Brownies
These are so quick you can make them within minutes of children arriving home with unexpected friends for tea.
Ingredients
150 g (5 oz) wholemeal self-raising flour
½ teaspoon bicarbonate of soda
175 g (6 oz) light brown soft sugar
125 g (4 oz) desiccated coconut
4 tablespoons cocoa powder
125 g (4 oz) margarine, diced
2 eggs, beaten
150 ml (¼ pint) milk

Method
Grease and line a 22 cm (8½ inch) square dish.
Mix together the flour, bicarbonate of soda, sugar, coconut and cocoa in a large bowl.
Place the margarine in a bowl and microwave on HIGH for 1 minute. Beat into the dry ingredients, with the eggs and milk, until smooth. Pour into the prepared dish.
Cook on HIGH for 8 minutes. Leave to stand for 5 minutes, then turn out onto a wire rack to cool.
Cut into squares to serve.
