Apple and Walnut Loaf
Ingredients
Makes 10 slices
175 g (6 oz) wholemeal flour
1 teaspoon baking powder
½ teaspoon mixed spice
75 g (3 oz) margarine
125 g (4 oz) light brown soft sugar
1 egg, beaten
250 g (8 oz) cooking apples, peeled and grated coarsely
50 g (2 oz) walnuts, chopped
3 tablespoons milk
25 g (1 oz) demerara sugar
Method
Place the flour, baking powder and mixed spice in a bowl, mix together and set aside.
Beat the margarine and light brown sugar together until creamy, then add the egg, beating well.
Fold in the flour mixture, then the apple and walnuts. Stir in the milk.
Turn the mixture into a greased 13 x 18 cm (5 x 7 inch) loaf dish, level the top, then sprinkle with the demerara.
Cook on HIGH for 5 minutes. Leave to stand for 10 minutes, then turn out onto a wire rack to cool. Cut into slices to serve. Best eaten same day as making.
