Continental Cheesecake

This cake can be decorated with fruit of your choice. Serve thin slices as it is very rich.

Ingredients

50 g (2 oz) butter
50 g (2 oz) caster sugar
3 tablespoons clear honey
2 eggs, beaten
2 x 227g (8 oz) cartons curd cheese
Grated rind and juice of ½ lemon
142 ml (5 fl oz) carton soured cream
2 teaspoons cornflour
1 teaspoon vanilla essence
50 g (2 oz) sultanas

For The Base:

50 g (2 oz) butter
1 tablespoon golden syrup
125 g (4 oz) ginger thin biscuits, crushed

To Decorate:

142 ml (5 fl oz) carton double cream, whipped
Slices of fruit, e.g. kiwi

Serves: 12


Method

Grease the base and sides of a 1.5 litre (2½ pint) microwave loaf dish and line with microwave clingfilm.


Beat together the butter, sugar and honey, then grad­ually add the eggs. Beat in the cheese, lemon rind and juice, soured cream, cornflour and vanilla essence and mix until smooth. Fold in the sultanas.


Spoon into the prepared dish, cover with microwave clingfilm and cook on DEFROST for 20 minutes. Remove the cover.


Place the butter and syrup in a bowl and microwave on HIGH for 1 minute. Stir in the biscuit crumbs, then spoon on top of the cheesecake, pressing down gently. Leave to cool, then chill until required.


Invert the cake onto a serving plate and remove the microwave clingfilm. Decorate with the cream and fruit.

Preparation time: 25 minutes
Power setting: HIGH and DEFROST
Cooking time: 21 minutes
