Burrito Bites
Ingredients
1 (10-ounce) can tomatoes with green chillies
1 cup instant rice
⅓ cup water
1 green bell pepper, chopped
2 green onions, sliced
1 cup (4 ounces) shredded cheese
10 flour tortillas
1 (16-ounce) can ranch-style refried beans
1 cup salsa
1 cup (4 ounces) shredded cheese

Method
Combine the tomatoes with green chillies, rice and water in a saucepan. Bring the mixture to a boil. Reduce the heat and simmer, covered, for 1 minute. Remove from the heat and let stand for 5 minutes or until all of the liquid is absorbed. Stir in the bell pepper, green onions and 1 cup cheese.
Spread each tortilla to within ⅛ inch of the edge with 3 tablespoons of the refried beans. Top with a small amount of the rice mixture and roll to enclose the filling. Arrange seam side down in a 9x12-inch baking dish sprayed with nonstick cooking spray.
Bake, covered, at 350 degrees for 25 minutes. Cut each tortilla into 4 slices. Arrange on a serving platter. Top with the salsa and sprinkle with 1 cup cheese.
