Fried Mozzarella Sandwich
Ingredients
115g/4oz mozzarella cheese, thickly sliced
4 thick slices white bread
1 egg
30ml/2 tbsp milk
Vegetable oil, for frying
Salt and freshly ground black pepper
Tomato, to garnish

Method
1. Place the cheese on two slices of bread and season to taste. Top with the remaining bread to make two cheese sandwiches.
2. Beat the egg with the milk. Season with salt and pepper to taste and pour into a shallow dish.
3. Carefully dip the sandwiches into the egg and milk mixture until thoroughly coated. Leave to soak while heating the oil in a large, heavy frying pan.
4. Fry the sandwiches, in batches if necessary, until golden brown and crisp on both sides. Remove from the frying pan and drain well on kitchen paper. Garnish with tomato.
VARIATION:- Use any favourite cheese instead of mozzarella. Add some chopped spring onions (scallions) and sliced cooked ham or salami before sandwiching the bread together.
