Tuna Melt

Ingredients

90g/3½oz can tuna, drained and flaked
30ml/2 tbsp mayonnaise
15ml/1 tbsp finely chopped celery
15ml/1 tbsp finely chopped spring onion (scallion)
15ml/1 tbsp chopped fresh parsley
5ml/1 tsp lemon juice
25g/1oz/2 tbsp softened butter
4 slices wholemeal (whole-wheat) bread
50g/2oz Gruyère or Emmenthal cheese, sliced
Salad leaves, tomatoes and corn, to garnish

Method

1. Mix together the tuna, mayonnaise, celery, spring onion, parsley and lemon juice in a small bowl.


2. Butter the bread with half the butter and spread the tuna filling over two slices. Cover with the cheese, then sandwich with the remaining bread.


3. Butter the top of the bread and place under a moderate grill (broiler) for 1-2 minutes. Turn over, spread with butter and grill (broil) for a further 1-2 minutes until the cheese begins to melt. Garnish with salad leaves, tomatoes and corn.
