Mushroom Pâté
Ingredients
40 g (1˝ oz) butter
1 small onion, chopped
250 g (8 oz) flat mushrooms
113 g (4 oz) cream cheese
25 g (1 oz) fresh breadcrumbs
1 tablespoon mushroom ketchup
Salt and pepper to taste

Method
Place the butter in a bowl and microwave on HIGH for 30 seconds. Add the onion and cook for 2 minutes.
Chop the mushrooms finely, then squeeze them in kitchen paper to remove excess liquid. Add to the onion and cook on HIGH for 4 minutes. Drain well.
Transfer the mixture to a blender or food processor, add the remaining ingredients and work to a rough purée.
Spoon the pâté into a serving dish, cover and chill for at least 4 hours or overnight. Serve with Melba toast.
Preparation time: 10 minutes, plus chilling time
Power setting: HIGH
Cooking time: 6˝ minutes
