Chicken Teriyaki Kebabs
With its authentic Japanese flavour, this is a succulent and impressive way to serve chicken as a starter. To make spring onion tassels for the garnish, trim the onions and cut the green part into fine strips. Place in a bowl of iced water and leave to stand for about 30 minutes; drain on kitchen paper.
Ingredients
2 boneless chicken breasts, skinned
2 tablespoons soy sauce
1 teaspoon demerara sugar
2 tablespoons dry sherry
1 teaspoon finely chopped fresh root ginger
1 clove garlic, crushed
Oil for brushing
To Garnish:
Shredded lettuce
4 spring onion tassels (see above)

Method
Cut the chicken into small pieces and place in a dish.
Combine the soy sauce, sugar, sherry, ginger and garlic, pour over the chicken and mix together. Cover and chill overnight.
Thread the chicken onto 8 wooden cocktail sticks. Place on a microwave rack over a dish, brush with oil and cook on HIGH for 6 minutes, turning halfway through cooking.
Serve hot, on a bed of shredded lettuce, garnished with the spring onion tassels.
