Stilton Mushrooms
Ingredients
250 g (8 oz) large flat mushrooms
50 g (2 oz) butter
2 shallots, chopped finely
175 g (6 oz) Stilton cheese
25 g (1 oz) fresh breadcrumbs
Salt and pepper to taste

Method
Carefully remove the stalks from the mushrooms and chop finely. Wipe the caps with damp kitchen paper.
Place half of the butter in a bowl and microwave on HIGH for 1 minute, then add the mushroom stalks and shallots and cook on HIGH for 2 minutes.
Leave to cool for 5 minutes, then crumble in the cheese, add the breadcrumhs, salt and pepper and mix well. Divide the mixture between the mushroom caps.
Place the remaining butter in a large shallow dish and microwave on HIGH for 1 minute. Place the stuffed mushrooms in the dish and cook for 2 minutes.
Serve immediately.
