Avocado And Crab Thermidor
Ingredients
15 g (½ oz) butter
2 tablespoons plain flour
150 ml (¼ pint) milk
1 teaspoon tomato purée
Juice of ½ lemon
Good pinch of cayenne pepper
250 g (8 oz) crabmeat, fresh, frozen or canned
2 large avocados, halved and stoned
4 teaspoons grated Parmesan cheese
Salt and pepper to taste

Method
Place the butter in a small bowl and microwave on HIGH for 30 seconds. Stir in the flour and return to the microwave for 30 seconds.
Pour the milk into a jug and heat on HIGH for 1 minute, then gradually blend into the butter and flour. Cook on HIGH for 2 minutes, whisking every 30 seconds.
Add the tomato puree, 1 teaspoon of the lemon juice, cayenne, salt and pepper to the sauce, then stir in the crabmeat.
Sprinkle the avocado flesh with remaining lemon juice.
Pile the crabmeat filling into the avocado halves, then sprinkle with the Parmesan cheese. Place in a shallow dish and cook on HIGH for 3 minutes. Serve hot, with brown bread and butter.
