Tarragon Trout
Ingredients
50 g (2 oz) butter
1 small onion, chopped
250 g (8 oz) button mushrooms, chopped
1 tablespoon chopped tarragon
4 trout, cleaned
2 tablespoons dry white wine
Salt and pepper to taste
To Garnish:
Lemon slices
Tarragon sprigs

Method
Place the butter in a bowl and microwave on HIGH for 1 minute. Add the onion and cook on HIGH for 1 minute. Stir in the mushrooms and cook for 2 minutes. Add the tarragon, salt and pepper.
Make 2 slits on each side of each fish to prevent the skin from bursting during cooking. Divide the mushroom mixture between the trout, stuffing it into the body cavity. Shield the tails with foil.
Place the fish in a shallow dish, pour over the wine, cover and cook on HIGH for 12 minutes, changing the position of the fish halfway through cooking.
Garnish with the lemon slices and tarragon to serve.
