Salmon With Dill Sauce
Ingredients
4 salmon steaks, about 2.5 cm (1 inch) thick
4 tablespoons water
Juice of ½ lemon
2 egg yolks
125 g (4 oz) butter
1 tablespoon chopped dill
Salt and pepper to taste
Dill sprigs to garnish

Method
Arrange the salmon in a large shallow dish. Mix the water with 1 tablespoon of the lemon juice, season with salt, then pour over the fish.
Cover with greaseproof paper and cook on HIGH for 6 minutes. Set aside while making the sauce.
Place the egg yolks in a blender or food processor and blend for 30 seconds. Place the butter in a dish and microwave on HIGH for 1 minute, then add the remaining lemon juice.
With the motor running, pour the butter in a steady stream onto the egg yolks until combined. Pour into a bowl and stir in the chopped dill and salt and pepper.
Arrange the salmon on a warmed serving plate and spoon a little of the sauce over each portion. Garnish each with a sprig of dill.
