Pork Saté
This Indonesian dish consists of marinated cubes of meat cooked on skewers and served with a spicy peanut sauce. For chicken saté, use 500 g (1 lb) boneless chicken breast; for beef saté use 500 g (1 lb) rump steak.
Ingredients
625 g (1¼ lb) pork tenderloin, cut into 2.5 cm (1 inch) cubes
½ teaspoon chilli powder
½ teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1½ teaspoons salt
2 tablespoons soy sauce
1 tablespoon oil
For The Sauce:
1 tablespoon oil
1 very small onion, chopped finely
1 clove garlic, crushed
3 tablespoons peanut butter
½ teaspoon chilli powder
1 teaspoon light brown soft sugar
1 teaspoon lemon juice
To Garnish:
Spring onion tassels

Method
Place the pork in a bowl. Mix together the spices, salt and soy sauce, then mix into the pork, using your hands to knead the spices into the meat. Cover and leave in a cool place to marinate for at least 6 hours.
Thread the pork cubes onto bamboo or wooden skewers, brush with the oil and place on a microwave roasting rack or large microwave dish, over a bowl. Cover with greaseproof paper and microwave on MEDIUM for 10 minutes, rearranging and turning the kebabs after 5 minutes. Wrap in foil and leave to stand for 5 minutes.
To make the sauce, mix the ingredients together in a howl and cook on HIGH for 1 minute. Serve hot with the pork. Garnish the dish with spring onion tassels.
