Stuffed Peppers
These stuffed peppers make an ideal vegetarian meal. Serve with a leafy salad and granary bread.
Ingredients
4 large peppers
2 tablespoons oil
1 onion, chopped
3 celery sticks, chopped
125 g (4 oz) mushrooms, chopped
125 g (4 oz) wholemeal breadcrumhs
50 g (2 oz) Brazil nuts, chopped
½ teaspoon dried mixed herbs
125 g (4 oz) Cheddar cheese, grated
Salt and pepper to taste

Method
Slice the tops off the peppers and remove the seeds.
Place the oil in a bowl with the onion, cover and cook on HIGH for 3 minutes. Add the celery and mushrooms and cook for 2 minutes.
Mix in the remaining ingredients, then spoon into the peppers. Replace the tops and stand the peppers upright close together in a dish.
Pour in 3 tablespoons water, cover and cook on HIGH for 10 minutes. Stand for 2 minutes before serving.
