Brie Parcels With Almonds

Creamy French Brie makes a sophisticated starter or light meal, wrapped in vine leaves and served hot with chunks of crusty bread.

Ingredients

4 large vine leaves, preserved in brine
200g/7oz piece Brie cheese
30ml/2 tbsp chopped fresh chives
30ml/2 tbsp ground almonds
5ml/1 tsp crushed black peppercorns
15ml/1 tbsp olive oil
Flaked almonds

Method

1. Rinse the vine leaves thoroughly under cold running water and dry them well. Spread the leaves out on a clean work surface or chopping board.


2. Cut the Brie into four chunks and place each chunk on a vine leaf.


3. Mix together the chives, ground almonds, peppercorns and olive oil, and place a spoonful on top of each piece of cheese. Sprinkle with flaked almonds.


4. Fold the vine leaves over tightly to enclose the cheese completely. Brush the parcels with olive oil and cook on a hot barbecue for about 3-4 minutes, until the cheese is hot and melting. Serve immediately.
