Ciabatta With Mozzarella And Onions
Ciabatta bread is readily available and is even more delicious when made with spinach, sun-dried tomatoes or olives: you can find these variations in most supermarkets.
Ingredients
1 ciabatta loaf
60ml/4 tbsp red pesto
2 small onions
Olive oil, for brushing
225g/8oz mozzarella cheese, sliced
8 black olives, halved and stoned

Method
1. Cut the bread in half horizontally and toast the cut sides lightly on the barbecue. Spread with the red pesto.
2. Peel the onions and cut them horizontally into slices. Brush with oil and cook on a hot barbecue for 4-5 minutes until the edges are caramelized.
3. Arrange the cheese slices on the bread. Add the onion slices and scatter some olives over. Cut in half. Return to the barbecue or grill to melt the cheese.
