Cabbage Salad
Ingredients
1 ½ lb green or Savoy cabbage, 1 medium finely, shredded
1 medium onion, grated
2 tablespoons fresh parsley, chopped
⅓ cup olive oil, to taste
3 tablespoons wine vinegar, to taste
1 teaspoon sugar, salt and freshly ground pepper, to taste
1 green bell pepper, for garnish seeded, de-ribbed, and cut in thin rings

Serves: 6
Method
In a large salad bowl, combine cabbage, onion and parsley. In a small bowl whisk together oil, vinegar, sugar, salt and ground pepper. Pour dressing over cabbage and toss until thoroughly coated. Arrange bell pepper rings on top. Cover and chill before serving.
