Easter Ham Slice
Ingredients
1 ½ cups mashed, cooked sweet potatoes
½ cup applesauce
¼ tsp. cinnamon
2 centre-cut ham slices, ½ inch thick
¼ cup bottled lemon juice
½ cup brown sugar

Serves: 6
Method
Combine potatoes, applesauce and cinnamon. Spoon over 1 ham slice. Place remaining slice over potato mixture. Bake at 325ºF degrees for 1 hour. Combine lemon juice, sugar and 2 tablespoons pan drippings. Baste ham well. Bake for 15 minutes. Slice to serve.
